 In 1988, a small lot that was overgrown with wild blackberries and loquats was cleared and terraced; and an old crumbling well was upgraded to supply a new vegatable garden with abundant water. Sausalito Springs nestled in the hills overlooking the San Francisco Bay was born. Our first year of production was a year of trial and error. Il Fornaio supported us by purchasing everything we grew: beets, leeks, radicchio, Belgian endive, arrugula, baby lettuce, escrarole, and watercress. The second year we added new vegetables, eliminated others, and increased the beds of watercress. The watercress thrived in the unique climate conditions of the area, and by the third year all of the colorful patches of the garden were replaced by the lush green of watercress. The proximity to the market gave us an edge and we eventually became the sole supplier of organic watercress to San Francisco and Marin County’s finest restaurants. Bradley Odgen's Lark Creek Inn in Larkspur and Greens at Fort Mason were among our first clients, and we have continued to be their watercress supplier for over 16 years. Every season, while the demand for our organic watercress increased, the size of our farm limited how much watercress we could actually grow. In 1998 a sister farm in the hills of Sonoma County, California started producing watercress. Similar climate conditions and more space made this an ideal location for expanding our operation. While building and planting, we again experienced a year of trial and error. With the support of our loyal clients, we and our watercress were able to adapt to the differences in soil and temperature. Today we cultivate over three acres of watercress beds. Our watercress is grown in our own fresh well water. It is harvested tops only, triple washed, hydrocooled, and hand-packed daily. Sausalito Springs has been certified by the California Certified Organic Farmers since 1990. We deliver to San Francisco, the East Bay, Marin, Napa, and Sonoma Counties and ship throughout the United States. We are no longer nestled in the hills overlooking San Francisco, but are surrounded by the rolling hills of Sonoma County. We pride ourselves on our dedication to our clients, and know that we are providing the best watercress available. We have maintained the small family farm spirit and standards of quality. We consider each sprig of watercress that is hand cut to be "a labor of love".
